For 2025, the property unveils a new chapter with the opening of “Borgo degli Ulivi,” a collection of eleven additional rooms and suites launching this July, each one conceived as a private sanctuary in dialogue with the surrounding landscape.
The new accommodation offering includes the 75sqm Itria Suite, four 70sqm Corner Suites, and six Junior Suites measuring 55sqm each. Each suite features a private garden and swimming pool, continuing the hotel’s emphasis on quiet luxury and architectural intimacy. Designed by Polizzi, the spaces reference local materials, white limewashed walls, terracotta tiles, and verdant greens, while integrating contemporary furnishings that don’t distract from the views or the terrain. “Borgo degli Ulivi” echoes the stylistic vocabulary first introduced with “Borgo Pietra Viva,” Masseria Torre Maizza’s original residential cluster that established its design identity when the hotel reopened.
Beyond the architecture, the 2025 season offers guests curated local itineraries that extend the spirit of the masseria into the surrounding region. One such experience is the Foraging for One’s Personal Perfume workshop, where guests walk the countryside with a master perfumer, gathering wild herbs and native plants to craft their own scent. Another highlight is the Marine Sound Bath, which takes place in a hidden grotto near Monopoli. There, local musicians play traditional Apulian instruments as the sea provides a meditative backdrop, part concert, part ceremony. The journey continues to Polignano a Mare, a coastal town perched on cliffs above turquoise waters, often compared to the Amalfi Coast for its dramatic beauty.
On property, the sensory immersion continues with dining by Chef Fulvio Pierangelini, whose culinary direction across Rocco Forte Hotels is celebrated for its elegant simplicity. At Carosello, guests dine under citrus trees in a courtyard that feels suspended in time. Poolside, Violetta serves Mediterranean plates in a setting that encourages long lunches and slow afternoons. And beneath the vaulted arches of the old barn, the Bougainvillea Bar offers aperitivi with an atmospheric twist.
